Mother Earth Makes Dinner

Last night Chelsea came over and made dinner for her tired, grateful parents. She made what we fondly refer to as "tuna surprise". It is an inspired recipe from my mother that we all like.Chelsea knew we needed a break and provided it...with a few giggles. When she has her hair up like this, she makes me laugh and I think she looks like "Mother Earth". She is a great, if somewhat tactile (check out the hands...) cook.The recipe is simple...tuna, mixed with Miracle Whip and chopped green olives, cheddar cheese, chopped hard boiled eggs and minced onion (optional). You put them all on sliced bread wrapped in foil and into the oven till warmed. The melted cheese makes it delicious and the olive gives it a little zing. I'm thinking here she is getting into the picture taking and looking a little like Nigella or Giada...huh? Like I said , -a few giggles... Anyway, it was a welcomed treat...thanks Chelsea!!! mmmmmm.......
